A list of Humphrey family vital dates is located in the files of the Saratoga County Historian. The greater part of this list was probably copied from a Humphrey family Bible all at one sitting, as the handwriting is of uniform style and quality until the last three entries on the front of the page. It has proven to be reliable: several of the dates can be verified through comparison with other sources.
The most useful date from that list was the one entered for the birth of William Humphrey: April 15, 1797. That date agrees exactly with the date on the gravestone of William Humphrey in the Town of Milford, Otsego County NY.
The 1855 New York State census of the Town of Milford included as family #35:

I believe this George listed as William's grandson in 1855 is the son of Henry L. Humphrey and his first wife Sarah Gardner. She had probably died of complications shortly after his birth. I have been unable to locate a listing in the 1855 census for Henry L. Humphrey.
Henry Lafayette Humphrey was born on July 14, 1825 in Milford, Otsego County NY. An article incorporated into Cornelius Durkee's book Reminiscences of Saratoga relates that the Humphreys moved from Otsego County to Stillwater, Saratoga County about 1836. He lived in Mechanicville until 1866 when he moved his family to Saratoga Springs. These articles portray H.L. Humphrey as a very successful contractor in that city.
